When the fine French oak barrels used during the fermentation and aging of Goosecross Chardonnay are saturated with wine, they are no longer beneficial to the winemaking operation. The wood staves from the barrels are dried and used in the hot-smoked process of our premium salmon. This salmon, exclusive to Goosecross Cellars, is wine smoked in the Native tradition. This process seals in the deep, rich, naturally smoky flavor.
Coho inhabit the waters off the northwest coast of the U.S., British Columbia and Alaska. They can reach sizes of up to 25 pounds but typically range between 5-15 pounds.
Goosecross Coho smoked salmon requires no refrigeration. The vacuum pack provides the salmon with a 5-year shelf life. All-natural, no preservatives, and high in Omegas 3s.
